Cheese bread with Feta
Ingredients1 kg fine flour
25 gr fresh yeast
10 gr oregano
100 ml olive oil
5 gr sugar
7 gr salt
2 gr white pepper
300 gr grated, unsalted Feta
450 ml water
PreparationPlace all the ingredients - except for the feta cheese and the salt - in a mixer and mix until you obtain a malleable pastry. Add most of the feta cheese (keeping some to place on top) and the salt during the last 4 minutes of the pastry kneading.
Place the pastry onto cling film and let it rest for 15 minutes.
Cut the pastry into 120 gr parcels. Roll these into longish shapes. Add on top the remaining feta cheese, and a little olive oil with oregano.
Place the cheese breads on a baking tray lined with rice paper and let them sit until they have roughly doubled in size.
Bake them at 180 oC for 25-30 minutes.
